i've canned beans n ham twice.and i did things different each time.and here's the first time..
1LB of pinto bean rinsed off..
then placed in large pot of water and i add pinto bean seasoning to it.(my preferred amount .i cooked them untill almost done,then i add the ham.always making sure there's just barley plenty of water the whole time.then i shut the fire off when i know the beans are done to my liking.
i have the 1 pint jars lid rings and funnel out and ready by this time.i place the funnel into the first jar,and is a 3/4 cup measuring spoon/cup with handle.pic will be below once i take a pic of it n post it.
i use the 3/4 cup measuring spoon/cup with handle to scoop the beans n ham into the jar untill 1 inch from top of jar.then i move on to the next one.and continue this untill i have done this with all the beans n ham.approximately 8 jars will be used for this.now use the same 3/4 cup measuring spoon/cup to dip the juice into the jars,until level to just above the beans n ham.place lids into place and screw on the rings.now move the pot out of the way and place (in my case) pressure cooker on the burner ,place 1 jar into pot and fill with water untill water is about 3/4 way up the jar,to avoid floating.then turn the fire on and place the rest of the jars into the water.and put the pressure cooker lid on and latch into place.now these next 3 steps vary for diff altitudes..im less then 1000 feet.so i go with 10psi.wait till steam is coming out the vent for 10 minutes.then place the weight on and pressure cook for 95 minutes.turn the fire off and let it sit untill there's no more pressure.remove the lid.remove the jars safely and place them unto a towel.then allow to cool over night.the lids should be sealed at this time.make sure by checking the center of the lid is down.if it is.it should be sealed good.if not.then just place it into the fridge,and plan on eating it..
